Do you have a favorite recipe?

The holidays are here again. We all have that one special recipe we love to make or share, or both!
I usually make a big batch of fudge for my husband this time of year. It requires a microwave. We no longer own one. We took it out of the Cougar because really we never use it and needed the space for pans and other cookware.
Since I won’t be making it this year the next best thing is sharing the recipe with ya’ll.
When we bought our first maybe 3rd Microwave, we bought a cookbook for Microwave cooking. This was one of the favorite recipes in it. The page was well worn and had many chocolate stains on it.
I have tried making this in “tupperware bowls” and glass bowls. The best I have found to not make “chocolate syrup” is use an old corning ware 3-4 qt dish. Believe me I have made lots of “syrup” not using the right cookware for this. Also it don’t cook well in high humidity days. Just something I have taken note of.

Microwave Fantasy Fudge
Ingredients
- 3 cups white sugar
- 3/4 cup margarine
- 2/3 cup evaporated milk
- 1 (12 oz) package semisweet chocolate chips
- 1 (7 oz) jar marshmallow creme
- 1 cup chopped walnuts or Pecans
- 1 teaspoon vanilla extract
Steps
- Grease a 9×13-inch pan or line with parchment paper.
- Mix in butter, sugar and milk until combined.
- Microwave the mixture for 3 minutes on high or until it begins to boil. Stir the mixture after 3 minutes, making sure that the sides of the bowl are scraped well. Microwave the mixture for 3 more minutes. Repeat scraping the bowl. Do this in 3 minute increments until the sugar granules are mostly dissolved.
- Remove from microwave and stir in the chocolate chips until melted. Add in the marshmallow creme, walnuts, and vanilla extract. Mix well.
- Pour the fudge into the 9×13 inch baking pan. Let the fudge cool and then cut into squares. Pour the fudge into the 9×13 inch baking pan. Let the fudge cool and then cut into squares.
